One thing that I am sucker for is a big, soft, and thick bakery style cookie. One thing that I am not a sucker for is the bakery style prices most places charge. I mean, you can easily pay $2-$5 per cookie! I decided to remedy this little dilemma by coming up with a bakery style cookie recipe that I could make at home for a fraction of the cost that I would pay at a specialty bakery. ;)

It is really no big secret that I am fan of all the cookie butter things. (My Cookie Butter Pecan Fudge, Biscoff Gingersnap Brownies, and Homemade Biscoff Flavored Coffee Creamer are all cases in point.) So, I packed these palm-sized cookies full of cookie butter spread and for good measure, lots of M&M's candies. :)

It's December, folks and that means one thing- the holiday season is upon us, you all. When I think of the holidays, my mind naturally turns to the tastes and flavors of the season. Frosted sugar cookies, gingerbread, hot cocoa, and of course, fudge. 









I mean, homemade fudge cut into perfect little squares tucked away into tins is just classic Christmas to me. My mother is the fudge maker in our family. 









She always whips up a batch of peanut butter and then a batch of chocolate fudge with walnuts almost every single December. She makes it from scratch and gets it perfect just about every single time. 









Me? Not so much. I was not blessed with her fudge making skills. ;)









But I discovered one secret ingredient last year that helped me finally overcome my fudge making handicap- a tub of store-bought frosting. 









Yes, some may call it cheating, but I just like to call it genius and pretty much foolproof. It has allowed me to finally make a delicious contribution to the family holiday fudge making each December.









I let my mama handle the classic fudges while I branch out and experiment with new flavors using my easy method for making fudge. My latest fudge creation is buttery and rich, made with creamy cookie butter and crunchy pecans. A perfectly decadent & easy to make treat for the holidays...

I think by now you all are well aware of my obsession with and love for Biscoff spread, aka cookie butter.  It started with that very first spoonful. And trust me.... that is all it takes to begin the addiction, folks. ;)





So, you all can probably guess at how thrilled I was to discover that there is a cookbook out there filled with just recipes that use Biscoff spread and cookies!  




As soon as I made this discovery, I ordered my copy from Amazon- The Biscoff Cookie & Spread Cookbook from Katrina Bahl of Katrina's Kitchen.  It was also pretty nice to know that there happens to be another food blogger out there who shares my affinity for all things cookie butter. 





I had been kicking around an idea for a gingersnap crusted brownie for a couple of weeks now. I just love the combination of rich chocolate with spicy ginger.  But it needed something just a little more... 




As I was flipping through my copy of The Biscoff Cookie & Spread Cookbook, I came to the recipe for Biscoff Buttercream and I knew that I found the missing component for my brownie recipe idea.  The creamy buttercream with it's spiced buttery cookie flavor turned out to be just the icing on the cake (ahem... brownies) I was looking for for this new sweet treat recipe...

Foodie confession time- I do not own a food processor.
Yep, I hear you all gasping at this. ;)





I mean, I have tried to own one... twice now.
The first one I ever had in my kitchen didn't make it past a week before I had boxed it up and returned it to the store.





Food processors & I are just not good company. I always have issues with the lids not locking correctly, or changing out the blades, or snapping in the container the right away. I would literally spend like 15 minutes just trying to get the darn thing lidded & snapped in right just so it would turn on!





I did give it a shot once more.  That food processor ended up in a yard sale a few months later.
Sigh.

I will be honest.  I had been begging for a reason to make these Mud Pie Oreo Stuffed Brownie Cupcakes again.  I originally came up with this recipe towards the end of the summer, & I had kind of been hanging onto it... until today. ;)

I decided to jump back into the The Leftovers Club this month and was paired with the lovely Shaina from Take A Bite Out of Boca.  (By the way, she sent me an amazing homemade granola- be sure to pop on over to her blog in a bit to get the recipe!)
I knew this was the perfect excuse to whip up a batch of these brownie cupcakes again!

These stuffed brownie cupcakes are decadent and yummy and not so New Year's resolution-friendly. 
(Sorry! Sort of... ;)).

A couple of weeks ago, I picked up a bag of those red vanilla flavored candy melts at the craft store.  I really had no clue what I was going to do with them, but I knew I had to buy them.  I have been seeing all kinds of fun sweet treats & candies made from them on other blogs.  I was intrigued.  Usually I just melt down chocolate chips or white chocolate chips when want to dip or cover something.  
(These melts are WAY better than that method! :) )

I was contacted last month by Walkers Shortbread to part of their holiday blogger program.  I am sucker for shortbread... and Walkers Shortbread?  I am pretty sure there is no question that they make the best out there, right?  
It has taken all kinds of self control to not woof down every single box of cookies that they sent me- Shortbread Petticoat Tails, Assorted Shortbreads, Festive Shapes, Mini Stars, Mini Mincemeat Tarts, & Stem Ginger Biscuits....  Yep, Walkers was VERY good to this food blogger. ;)

And I am not going to lie.  I have been pining away for fall because I KNOW that Biscoff (also known as cookie butter under some labels) is the perfect complimentary flavor to just about all of the popular fall flavors.






Pumpkin?  Heck yeah! (And yes, there will be recipes coming to the blog soon marrying our favorite orange gourd with our favorite non-peanut butter spread.)

Cookie Butter Apple Crisp {For Two}

Cookie Butter Week is about to come to a close on the blog.  (Yes, I know... *sad face*.) We must all do this again some time very soon, don't you agree? ;)  Stay tuned for a Cookie Butter Week Recap post tomorrow morning. 

I will leave you with one final original recipe using cookie butter, my Cookie Butter Apple Crisps for Two.  Apple crisp and apple pie are my husband's absolute favorite desserts (well, along with carrot cake, cheesecake, and red velvet cake. ;) )You could easily double or triple this recipe for feeding larger crowds. 

This was my first go at baking in glass jars.  Have you all tried this before?  It is actually pretty cool.  You just have to make sure to place the jars in a baking pan with a little water in the bottom to prevent the glass from breaking.  


Cookie Butter Apple Crisp {For Two}

Prep Time: 15 minutes
Cook Time: 30 minutes
Ingredients (2 servings)
    For the apple filling
    • 1 large apple (or 2 smaller apples), peeled, cored, and chopped
    • 2 tsp lemon juice
    • 2 tbsp brown sugar
    • 1 tbsp flour
    • 1/2 tsp cinnamon
    • 2-3 dashes of nutmeg
    For the cookie butter crisp
    • 1/2 cup flour
    • 1/4 cup rolled oats
    • 1/2 tsp cinnamon
    • 2 tbsp chilled butter, cubed
    • 2 tbsp cookie butter
    • 1 tbsp brown sugar
    Instructions
    Preheat your oven to 375 degrees.
    In a small bowl, combine the apples through the nutmeg for the apple filling. Set aside.

    In another small bowl, whisk together the flour, oats, cinnamon, and brown sugar for the crisp topping. Cut in the chilled butter until the mixture is crumbly. Now mix in the cookie butter. Set aside.

    Spray the insides of two 12 oz glass jars with cooking spray. Evenly distribute the apple filling between the two jars. Now top each jar with the cookie butter crisp dough.

    Place both filled jars in a baking pan and fill with about an inch of water.
    Bake for 25-30 minutes, until the apples are bubbly and the crisp topping is golden brown.

    All to cool to warm before serving.
    Top with whipped cream or ice cream, if you wish.

    These Cookie Butter Apple Crisps in jars were perfect for just the husband and I.  We have my son every other week, so there are evenings when desserts (and dinners) for two make sense for us.  When I do share one of my recipes meant for two, I try to make sure that the ingredient list can be easily double or tripled for larger families. :)
