It's that time of the year when we find ourselves making resolutions & goals to try to eat better, healthier in the new year. I know most of us (myself included) start out with really good intentions for the first few weeks of a brand new year, and then we get sidetracked. Most often than not, it is my family that is my #1 distraction from healthier eating





And while I am the primary cook in the home, if my family refuses to eat what I make then it goes to waste. My almost 4 year old is pretty good about trying new foods & eating her veggies, but my husband and teenage son are a whole other beast. 





My husband turns up his nose at just about anything green other than iceberg lettuce in a bowl covered with shredded cheese & croutons and drowning in Ranch dressing. And my teenager can detect even the slightest bit of whole grains in a recipe & instantly becomes repulsed. 





I cannot even begin to tell you why that is (I LOVE whole grain pasta myself!), but instead of wasting my breath & time trying to convince my son & husband why they should be eating healthier I have decided to just be sneaky with it. What they don't know can't hurt them, right? ;) In fact, it can only do the opposite- help them!





Hidden veggies and sneaking in whole grains has become my regular thing when cooking for my family. Whether ground in, pureed and mixed in, and or super finely chopped & shredded, I squeeze in the good stuff whenever & wherever I can. And it usually goes more or less undetected. 





One of my family's favorite dishes is macaroni and cheese. I mean, who doesn't like a creamy, cheesy mac & cheese? So I went on a quest to search some of my favorite food blogs for the best secretly healthy mac & recipes I could find. :)

Finding balance hasn't always been my strong suit.  Occasionally I nail the whole balance thing, but then find myself straying back to one extreme or the other.  (Usually towards the "I will eat whatever & work out when I feel like it" extreme.  Yeah, not the balanced lifestyle I was aiming for... )

And being a food blogger- especially during the holiday season- definitely doesn't make it easy to keep a healthy balance.  Hello... my job is to create amazing holiday perfect treats & sweets for the masses. ;)  By the time January 1st rolled around, I wasn't feeling very good about what I had been putting into my body lately, how very little I had been making it to the gym, and how snug my once perfectly fitted jeans had started to feel. 

I determined it was time for me to find balance...
And when I say balance, I am not just talking about the foods I eat and how many times a week I practice my yoga.

When my son was younger, he pretty much refused to eat any vegetable that was green. It didn't matter how I prepared it or tried to hide it, the second that he saw a hint of green he would scoff and turn his nose up at it.
But that all changed the day he had Broccoli Cheddar Soup from Panera for the first time.  I am not sure what made him try it that day, but he was hooked... and he was eating broccoli, folks!
I wasn't going to question it. ;)

There are tons of copycat recipes floating around out there for Panera's Broccoli Cheddar soup, so what makes my version so special? Because A. It is 100% vegetarian. B. No cornstarch or flour was used to thicken this soup thanks to my secret fiber rich ingredient. & C.  Despite all of these healthier changes I made to this beloved recipe, my son was clueless. He gobbled down a bowl of this, exclaimed how much it tasted like Panera's, and then went back for seconds...

It is no big secret in the blogging world that the holiday season is the busiest time of the year for most of us food bloggers. Even if you are not a food blogger, I think everyone feels the time crunch around this time of the year. Eating for an empty womb?

I was at our favorite Italian market yesterday, grocery shopping for the first time since I miscarried.  Looking at the produce and the Italian meats and cheeses, I realized that I was still walking around with the pregnant mindset.  Is it okay to eat this?  Ooooo, I read this is really good to eat for the baby's nervous system development.  Yes, I know this is a super baby making food, but I don't know if I actually want to eat that.  You know, the typical thoughts that go through any pregnant mother's mind as she navigates the world of food and drink, vitamins and minerals, safe and unsafe.  And then I remembered I am not eating for a growing fetus anymore.  I am just eating for me.  And as a foodie and woman in her mid-30's who so desperately wants to be a mom again, this is a hard reality for me.

I most always eat for enjoyment and health, but the foods I purchase and prepare become so much more important to me when I know I am pregnant.  Theses meals I prepare, each bite that I take is one more building block towards that beautiful, healthy baby I imagine I will hold in my arms in less than 9 months.  When you go from expecting to empty in a matter of a few days, it takes a few more days for your mind to reset to the non-pregnant ways of thinking.  And this hits me nowhere harder than in my cooking, my grocery shopping, eating.  Because before baby, food was an important element to my life.  My creative outlet, my passion.  And for the moment, my love for food feels hollow, meaningless.  It is temporary, but since I tend to eat 3 meals a day and a few snacks in between, it is a constant daily reminder of my now empty womb...

I have had a love/hate relationship with making smoothies. I love sipping on smoothies and packing them full of the good stuff. But I have often found myself hating actually having to blend them up. 





You do that first pulse of the blender just to have to take a spoon to scrape down the sides of the blender cup and scoop up what is laying on the bottom to get it all blended in and smooth & creamy. And often times I have to repeat that once or twice more. 





I know that a fancy pants high tech blender would solve my little blender conundrum, but have you all seen the price tags on some of those blender models?? Yikes





When Hamilton Beach approached me about giving their new Wave-Action® Blender a whirl (see what I just did there ;) ), I was all in. I mean, what did I have to lose? Besides possibly my smoothie/blender frustrations. 





And the first thing that I whipped up in my new sleek & shiny Wave Action Blender was this smooth and creamy Chocolate Raspberry Chia Seed Smoothie. 





I kind of have a thing for making smoothies that tastes just like desserts since my mean sweet tooth can often get in the way of my attempts to eat healthier. ;) This creamy and chocolaty smoothie satisfied my sweet tooth without the guilt...

When it comes to breakfast for myself and my family, I like making sure that we start our day with something healthy & filling that can take us right on through to lunch. And since we all have different start times to our days (my teenage son being up and at 'em well before the rest of us), I need breakfast recipes that will be easy to grab and ready to go no matter if we are eating breakfast at 6am or 9am. That is why I just love baked oatmeal! :) I can bake up a batch on a Sunday night, cut it into generous squares, and then slip each one into it's own ziploc baggie. Those hearty oatmeal squares become the perfect grab and go breakfast throughout the rest of the week. 

I have made different versions of baked oatmeal before (you all may remember my Almond Joy Banana Bread Baked Oatmeal & my Double Berry Banana Bread Baked Oatmeal), but this moist & satisfying Peanut Butter Chai Banana Baked Oatmeal just may be our favorite one yet. Not only is this baked oatmeal packed with lots of the good stuff (think bananas, whole oats, chia seeds), but you just can't beat the flavor combo of creamy peanut butter with chai spices. I have to admit that sometimes being a food & travel blogger is a pretty cool gig to have. Every so often I get an invite to travel to a different state, eat some amazing food, learn a little about a city or certain area of food production, and all while getting to hang out with a fabulous group of fellow bloggers. A couple of weeks ago I had the opportunity to travel to Minneapolis as part of the Pass the Pork blogger tour with the National Pork Board. While I am no stranger to buying, cooking up, & enjoying pork (have you guys seen all my recipes using bacon yet?? ;) ), I didn't know much about the actual production side of the pork industry, aka pig farming. I have always been one who has jumped at the chance to see firsthand just exactly where my food comes from, so I was excited that a visit to an actual Minnesota pig farm was on the trip's agenda.

The folks at Wakefield Pork graciously extended a full tour of their pig farming facility to the bloggers attending the Pass the Pork tour, and no question was off limits. I was really impressed with how transparent and gracious they were in explaining everything that goes into their pig farming process from breeding to market...

I have chatted with you all a little before about how I am trying to make healthier swaps happen here and there on the daily lately. With the weather warming up, there is no denying that shorts and swimsuit season is bearing down on us all, right? {Lighter} Strawberry Cheesecakes for Two







Okay, by now we all know that I am not the light food blogger or the healthy lifestyle chick.  I mean, I try to eat the balanced diet and all, but let's face it.... I have a sweet tooth.




A mean sweet tooth.  





When Brin from Bold Butter Baby approached me about becoming a monthly healthy recipe contributor to her blog, I scratched my head at first.  Has she seen my recipes?  I am definitely no two sticks of butter Paula Dean over here, but I am also no Ellie Krieger either.  





But I saw this as the perfect opportunity to challenge myself to develop at least one healthier recipe each month.  
Perfectly doable.





Now you all may be confused at this point...
Cheesecakes?  I am sure you all asking why in the world would I be starting a monthly healthy recipes blog contribution with a cheesecake recipe??  





Two words... Greek. Yogurt.





And I thought this duo of creamy cheesecakes would be absolutely perfect for that special Valentine's Day dinner you may be planning. ;)  





(By the way, did you catch my recipe for Herb & Apple Roasted Chicken yesterday? I should mention it is also waistline friendly & the perfect main course for a Valentine's Day dinner.)





What you will need:
4 oz. 1/3 less fat cream cheese, softened
1 5.3 oz. container of strawberry Greek yogurt
1/4 cup + 1 tbsp sugar (I am not an artificial sweetener fan, but you could substitute a low calorie sweetener to make this recipe even lighter.)
1 egg
1/4 tsp vanilla
1/2 cup of graham cracker crumbs
2 tbsp butter, melted
Two 4 inch springform pans (4 inch ramekins would work too- you just wouldn't be able to pop out the cheesecakes all pretty like I have ;) )





Preheat your oven to 300 degrees.  Spray cooking spray inside both of your springform pans and then wrap the bottoms and sides of the pans with foil.  



In a small bowl mix together the graham cracker crumbs, 1 tbsp of sugar, and the melted butter.











Place half of the graham cracker crumb mixture into each of the pans.  Lightly press the crumbs into the bottom and slightly up the sides of each pan.  Set both of the pans with the prepared crust on a baking sheet and bake for 8 minutes.












While the crusts are baking, whip up your strawberry cheesecake batter.  In a medium bowl, beat together the cream cheese, Greek yogurt, and sugar until smooth and creamy.  Now beat in the egg and the vanilla.  





Once the crusts are done, allow them to cool slightly- maybe 10-15 minutes.  
Then pour the cheesecake filling evenly into each crust.  





Bake the cheesecakes on the baking sheet for another 40-45 minutes, until the centers are set.





Let the cheesecakes cool in the pans for about 20 minutes on a wire rack.  Then carefully pop off the sides of the springform pan and store the cheesecakes still on their pan bases in an airtight container in the fridge for at least 2 hours.











When you are ready to serve your cheesecakes, just take them out of the fridge, slide them off of their pan bottoms & onto serving plates.  I topped our cheesecakes with a few fresh strawberry slices & some dark chocolate shavings.





The husband raved about this cheesecake.  To use his own words, "this is like something you would get in a restaurant!".  I will take that as a compliment. ;)

Who else has kiddos excited for the DVD release of Disney's FROZEN the movie next week?  
And who are we kidding, parents?  We are all just excited as the kids are for this one, right? ;)

Baby girl and I decided to start getting geared up for the big DVD release by heading to our local Walmart earlier this week for a few new FROZEN toys.  You really can't have too many, you know... 
We were on the lookout for an Olaf plush doll, but people really do adore that lovable snowman.  Anything Olaf has been flying off the shelves.
But she did find an adorable Baby Anna doll to love on among a few other things... :)

One Ingredient Healthy Ice Cream {A Guest Recipe from So There. By Amy}

In the summer, I definitely am craving ice cream! This is an awesome healthy and dairy free alternative to totally satisfy your ice cream craving!

The recipe has one ingredient:  Bananas! B-A-N-A-N-A-S!

...Plus a couple optional mix-ins added: unsweetened cocoa powder, nut butter, and sweetener, if desired, such as agave or maple syrup.



Yep. No dairy.  Not even a dairy alternative, like coconut milk. (Which is another of my ice cream posts, found here!)
A magical thing happens when you throw frozen sliced bananas in a food processor for about a whole minute or so. Yup. They turn into a soft serve ice cream-like consistency!


First, start pulsing them, and you will get small chunks.

Keep going, and they will turn into tiny little balls, like Dippin Dots!



Continue mixing in the food processor and it comes together, becoming nice and creamy. I promise. It does!






Yes, this will have a banana flavor, duh, but it is so refreshing, and the addition of cocoa powder and peanut butter makes it taste like an amazing chocolate covered banana, in ice cream form!


Add the other ingredients (this will help the bananas blend more and get even smoother - sometimes my food processor gets a little jammed up at a certain point with the bananas only), and pulse until incorporated.


...(Did the word incorporated just remind anybody else of KIDS Incorporated?!)  

Anywayyy, it should look like this!

Eat straight away, or scoop into a container and freeze until scoopable.

Boom! A super healthy frozen treat that totally resembles soft serve ice cream!

You could mix it up, and throw in any other flavors you like, too, instead of the cocoa powder and nut butter! Fresh fruit, like strawberries. Or a bit of honey and chai spice. Anything! Go crazy!...Go... Bananas! B-A-N-A-N-A-S!  Oh man...even I cringed at that bad joke!
