Summer is in full swing around here (I am not admitting that back to school is getting closer just yet, folks), and I am always trying to come up with fun and often times tasty ways for the kiddos and I to stay cool. Whether it is running through the sprinkler, heading to the local pool, or making a simple and frosty frozen treat like these 3 Ingredient PB & J Ice Cream Sandwiches.
Seriously, folks. These ice cream sandwiches are so easy to make and quick that you can even get those "bored" kids of yours in on the ice cream sandwich making fun! :) The method for making these is pretty much assembly line anyways, so you can assign one tasty task to each member of the family (just leave any cutting to the adults).

3 Ingredient PB&J Ice Cream Sandwiches

Prep Time: 15 minutes + 3 hours+ freeze time
Cook Time: None
Ingredients (1 dozen)
- 24 p$$t Graham Crackers
- p$$t Creamy Peanut Butter (about 1 tbsp per sandwich)
- Carton of p$$t Strawberry Swirl Frozen Dairy Dessert
Instructions
Line a large baking sheet with parchment paper. Spread 1 tbsp of the creamy peanut butter onto 12 of the graham crackers. Set aside.
Place the other 12 graham crackers face down on the baking sheet.
On a large cutting board, open the carton of strawberry swirl ice cream from the side. Unfold the carton's edges and pull back the carton packaging about halfway to reveal the block of ice cream. Cut a 1 inch slice of the ice cream from the block. Then cut that slice in half and trim slightly to fit the graham crackers. Place the 2 squares of ice cream onto 2 of the graham crackers on the baking sheet. Repeat for the remaining 10 graham crackers on the sheet. Place the graham crackers with the peanut butter on top of each of the ice cream topped graham crackers.
Place the graham cracker ice cream sandwiches on the baking sheet in the freezer for at least 3 hours. Once frozen solid, you can quickly individually wrap each one in plastic wrap. Store in the freezer until ready to eat.

Not only are these PB&J Ice Cream Sandwiches easy and kid-approved, but they are budget friendly too when you pick up the p$$t Peanut Butter and Graham Crackers from your local Kroger. I have to rave about the graham crackers for just a sec, friends.
Do you know how when you try to break a graham cracker in half to get the two squares, but often times it doesn't break evenly? You have one graham cracker about a third larger than the other with some kind of a slanted edge? That drives me crazy! No need to worry about that with the p$$t graham crackers because they already come in perfect squares right from the sleeves!
Saves a little time and a lot of sanity... ;)
