Game day happens to be family time in our home. It doesn't matter which teams are playing or who wins or loses (okay, my husband just may disagree with me on that one depending on who is playing exactly ;) ), the big game is always the perfect opportunity to invite family over and to hang out.

As a food blogger, I am occasionally faced with the dilemma of being stumped on a name for a delicious recipe I have created to share with you all.
About 95% of the time, the absolutely perfect name for a recipe comes to me before I have even finished researching and writing the actual recipe.





This was not the case with these Bailey's Irish Kiss Brownie Thumbprints.  
I mean they are cookies, but they are made with a brownie mix.





At first, I thought maybe I could name them brookies, but after chatting with a few food blogger friends it seems that the consensus is that a "brookie" is a cookie/brownie hybrid with two distinct components.





I briefly entertained calling them crownies... for like two seconds.  But that didn't sound right at all.

I like the XBox for Netflix... and for playing DVD's... and for looking up yoga workouts on YouTube.
That was until my son introduced me to Forza 4 this past week.  ;)

He has been prodding me to give at least one of his XBox games a go, and this was the one that appealed to me most.  No, I am not much for shooting up bad guys or building a badly pixelated village or castle.
But racing cars?  Yep.  Count me in!

I will be honest.  I had been begging for a reason to make these Mud Pie Oreo Stuffed Brownie Cupcakes again.  I originally came up with this recipe towards the end of the summer, & I had kind of been hanging onto it... until today. ;)

I decided to jump back into the The Leftovers Club this month and was paired with the lovely Shaina from Take A Bite Out of Boca.  (By the way, she sent me an amazing homemade granola- be sure to pop on over to her blog in a bit to get the recipe!)
I knew this was the perfect excuse to whip up a batch of these brownie cupcakes again!

These stuffed brownie cupcakes are decadent and yummy and not so New Year's resolution-friendly.

I know that when most people think of Valentine's Day that they think of it as a romantic holiday filled with roses and fancy dinners out with your significant other. But Valentine's Day has always been more of a family holiday to me. 





When I was growing up, my parents always made sure that my younger sister and I were included. We always received a card, a little red foil heart filled with chocolates, and other little goodies from them. And this is a tradition that I have continued on with my kiddos as well. 





In fact, I have already went out and bought all their Valentine's Day goodies for next Sunday. ;)





My youngest is now finally old enough to give her mama a helping hand in the kitchen, so this Valentine's Day we decided to whip up some special cookies for our family and her preschool classmates. 





At first we were thinking brownies, but then she suggested cookies. I happened to have a box of our favorite Pillsbury™ Chocolate Fudge Brownie Mix in the pantry, so I thought why couldn't we have both? 





With just a few simple ingredient tweaks, you can turn your favorite Pillsbury™ boxed brownie mix into fudgy & chewy cookies or what I like to call brookies (Get it? Brownies + cookies = brookies). ;) 





And to make these brookies perfectly festive for the Valentine's Day holiday, we topped them with a simple frosting made from Pillsbury™ Creamy Supreme® Frosting in Vanilla & crushed conversation hearts. I mean, what says Happy Valentine's Day better than pastel colored candy conversation hearts?

Dr. Pepper Brownie Bowls {A Guest Recipe From Busy Mom's Helper + A $75 Amazon Giveaway!}

'Olo' all you funtastic people! (can you tell I watched Megamind with the kids today?) I'm Danielle from over at Busy Mom's Helper, and I'm just tickled pink to be here today! I've been following Carrie's amazing blog and yummy recipes for quite awhile (non-creepily stalking, you could say) and can't tell you what a privileged it is to actually be guest posting here. My site is mostly recipes, with some crafts and parenting somethings thrown in. One thing you'll quickly notice about me is I LOOOOOOVE desserts! Seriously, it's extreme. Besides being oh-so-wonderfully delicious, there are some majorly fun baking accessories for things like desserts - one of which I discovered a few weeks ago and fell in love with: Brownie Bowls!!! 
Can we say 'AWESOME'?! I loved the idea of these, the endless possibilities you could do in here. I just had to get some, and have had so much fun creating new bowl concoctions, that I want to give YOU some, too! Now for a recipe demo of these fantastic things: Dr. Pepper Brownie Bowls! I love Dr. Pepper.....too much. I know it's not the healthiest habit by any means, and every few months I go on an 'I'm giving this up' kick. It never lasts - I think the longest is about two weeks! I have gotten better, though, and only drink about a can a day. I'm happy with that figure! Anywho...I started experimenting with putting Dr. Pepper into recipes, and it's definitely been fun! These Dr. Pepper Brownie Bowls are so gooey, yet chewy, and oh-my-goodness drool-worthy!
Ingredients 1 box Fudge Brownie mix 1 Egg 6 oz. Dr. Pepper (1/2 can) 1/2 tbsp. Maraschino Cherry juice 1/2 tsp. Vanilla
Directions Preheat oven to 350 degrees. Mix all of the ingredients EXCEPT the brownie whisk together in a large bowl. Add the brownie mix and mix until batter is mostly smooth. Pour batter into brownie bowls, making sure to fill ONLY to the fill line (otherwise the bottoms aren't as smooth and even). Bake for 20-25 minutes, or when a toothpick comes out clean. Allow the brownies to cool completely before removing from the bowls. Fill with frosting, cream, pudding, or whatever else you'd like! The frosting I chose this time was an in-the-works Dr. Pepper frosting that I'll share with you (just keep in mind it's 'in-the-works' still, so not perfect).

Frosting Ingredients 2 cups Powdered Sugar 1/4 cup Butter, softened 1/2 tsp. Lemon juice 1/2 tbsp. Maraschino Cherry juice 1/4 tsp. Nutmeg 1/4 tsp. Ginger 1/4 tsp. Apple juice 1/2 tbsp. Vanilla extract 8 oz. Dr. Pepper 1/2 cup Sugar
Frosting Directions In a medium saucepan, bring the Dr. Pepper and the sugar to a boil, stirring frequently so sugar dissolves. Once boiling, reduce heat and simmer for about 30 minutes. Mix all of the remaining ingredients in a bowl until smooth. Just adding 1 tbsp. at a time, mix in some of the Dr. Pepper mixture until you reach your desired consistency. Go slowly; if you add too much your frosting will be too runny. I added only a few tablespoons of the mixture. If desired, drizzle some of the Dr. Pepper mixture over the top of your brownies. Enjoy!

Cinnamon S'mores Brownies

First and foremost... Happy National S'mores Day, friends!! 
I thought that there couldn't be a better day than today to share with you all this ooey, gooey S'mores-licious recipe for Cinnamon S'mores Brownies that I have had tucked away in my Draft posts.  ;)

I seriously think S'mores is one of the best summer time desserts ever created!  The combination of the fire roasted marshmallow with melty chocolate sandwiched between two graham crackers?  Genius.  Plain and simple.
Of course, there are so many tasty, even gourmet twists on the traditional S'mores nowadays that the taste combinations are endless, right?

I originally got my inspiration for these brownies when I came across The Grant Life's incredibly easy S'mores Brownie Bars.  I didn't change too much with Kelley's recipe, but I did make a few cinnamony tweaks of my own.  
Hey, I had cinnamon graham crackers in the house, and I have always adored the combination of cinnamon with chocolate. 
What can I say? ;) 

Cinnamon S'mores Brownies
by Frugal Foodie Mama
Prep Time: 5-10 minutes
Cook Time: 30 minutes
Ingredients (12 brownies)
  • 1 cup graham cracker crumbs
  • 3 tbsp sugar
  • 1 tsp cinnamon
  • 1/2 stick of butter, melted
  • 19.9 oz box of brownie mix + the ingredients the box calls for to make them (I used the Betty Crocker Dark Chocolate brownie mix.)
  • 1/2 cup semi-sweet or milk chocolate chips (whichever is your preference)
  • 2 1/2 cups mini marshmallows
  • 6 cinnamon graham crackers, broken in half at their scores
Instructions
Preheat your oven to 350 degrees. Spray a 9x13 baking pan with cooking spray. Set aside.
In a small bowl, whisk together the graham cracker crumbs, sugar, and cinnamon. Pour in the melted butter and mix well. Press the graham cracker mixture evenly into the bottom of the prepared pan and refrigerate for at least 10 minutes.

While the graham cracker crust is chilling, prepare your brownie mix according to the box directions.

When the crust has chilled for at least 10 minutes, pour the brownie batter over it evenly. Sprinkle the top of the brownie batter with the chocolate chips.
Bake at 350 for about 25 minutes.

Remove the graham cracker crusted brownies from the oven and evenly cover them them with the mini marshmallows. Bake another 3 minutes until the marshmallows are nice and melty.

Remove from the oven and place the cinnamon graham crackers on top in 4 rows, 3 across. Bake another 3-5 minutes.

Let the brownies cool before cutting. Just cut along the graham crackers on top for 12 perfect Cinnamon S'mores Brownies. These brownies are excellent served at room temperature or slightly warmed in the microwave.
Be sure to try one right after cutting them when the brownies are still warm and gooey from the oven! :)

If there is one summertime flavor combo that I feel is overlooked all too often, it is most definitely the combination of juicy blackberries with rich dark chocolate. But let me tell you all this- it is a flavor combo that you need to make happen asap. Like this week if possible. Or even today. I mean, why wait for this deliciousness? ;) And luckily for you all, I have just the recipe to accomplish this- these ooey, gooey Chocolate Stout Blackberry Brownies!

I have taken this incredible combination of flavors just one step further by throwing a good chocolate stout beer into the mix as well. But no worries if you don't happen to be a beer fan. The beer flavor mostly bakes out leaving these decadent brownies with an extra level of richness.

These easy to make brownies were just meant for the ultimate chocolate/mint lover out there (ahem... like my teenage son). Plus, chocolate & mint is always a winning flavor combination for St. Patrick's Day, am I right? ;)





Not only did I stuff each of these fudgy brownies with a whole Thin Mint cookie, but I also tossed in some Andes baking chips just for good measure. In fact, there are Andes baking chips IN the batter & ON top of the baked brownies. 





Say what?!? Yeah, I know. Absolute chocolate/mint brownie perfection, folks...

I think by now you all are well aware of my obsession with and love for Biscoff spread, aka cookie butter.  It started with that very first spoonful. And trust me.... that is all it takes to begin the addiction, folks. ;)





So, you all can probably guess at how thrilled I was to discover that there is a cookbook out there filled with just recipes that use Biscoff spread and cookies!  




As soon as I made this discovery, I ordered my copy from Amazon- The Biscoff Cookie & Spread Cookbook from Katrina Bahl of Katrina's Kitchen.  It was also pretty nice to know that there happens to be another food blogger out there who shares my affinity for all things cookie butter. 





I had been kicking around an idea for a gingersnap crusted brownie for a couple of weeks now. I just love the combination of rich chocolate with spicy ginger.  But it needed something just a little more... 




As I was flipping through my copy of The Biscoff Cookie & Spread Cookbook, I came to the recipe for Biscoff Buttercream and I knew that I found the missing component for my brownie recipe idea.  The creamy buttercream with it's spiced buttery cookie flavor turned out to be just the icing on the cake (ahem... brownies) I was looking for for this new sweet treat recipe...

A visit to any local farmers' market or perhaps even to your own backyard garden will reveal that one thing is certain- zucchini season is definitely here and they are plentiful! :)






While I didn't plant any zucchini myself this year, I can attest that they can be pertained at both the farmers' markets and grocery stores for pretty darn cheap right now.  And cheap is always good. ;)






But let's be honest- you can only make SO many loaves of zucchini bread and batches of zoodles (have you all seen these??) before you are zucchini'ed out. 
So let's make something chocolaty, fudgy, and deceptively decadent with them instead, shall we?






These super simple and easy zucchini brownies were inspired by my friend Jellibean Journals' recipe for Life-Changing Skinny Avocado Brownies.  Both recipes have just 3 simple ingredients, but have only one ingredient in common- the boxed brownie mix! 






But both variations are delicious, fudgy, and are a fun  & easy way to sneak more veggies into your family's diet... ;)

Irish Coffee Brownies

Can we just chat about my love for Irish whiskey for a quick second? Because prior to about a year ago, I was absolutely not a whiskey drinker at all. I didn't like the smell of it or the taste of it, and I definitely wasn't sitting around on a Saturday night sipping it on the rocks. 





But it just turns out that I had been experiencing the wrong whiskey for pretty much my entire life. Who knew?





You see, my only experience with whiskey for most of my adult life was either the Canadian variety (ahem... Crown) or Kentucky whiskeys and bourbons. Other than a few sips of Jameson here and there, I had never really tasted Irish whiskeys before. 





Then last year I discovered what has now become my go-to whiskey- Tullamore Dew.





I have to give credit where credit is due. My boyfriend introduced me to the right kind of Irish whiskeys. Being a mixologist, he was able to pinpoint just what it was that I hadn't liked about the whiskeys I had tried before and was able to finally help me find one that I not only actually like, but that I absolutely enjoy as well.

I certainly hope that you all are not over pumpkin yet this season.  Because these Pumpkin Chocolate Chip Cookie Dough Layered Brownies just may change your mind about that if you think that you are. ;)






These brownies are kind of insane, folks.  They start with your favorite boxed brownie mix, although you could certainly use a homemade brownie recipe with this as well.  





Then those thick, fudgy brownies are covered with a creamy and egg-free pumpkin chocolate chip cookie dough layer. And if that wasn't enough, I went and topped the whole thing off with a simple chocolate ganache.  





Yep. Delicious insanity.
I dare you to try to eat just one. ;)
